🌾 Ashenafi Stew
Inspired by Ethiopia — Meaning “he who brings peace”

Ingredients
Red or brown lentils (1 cup, rinsed)
Tomato (1 large, chopped)
Garlic (2 cloves, minced)
Turmeric (1 tsp)
Cumin (1/2 tsp)
Chopped kale or collards (1 cup)
Water (3 cups or more)
Optional: fresh ginger, salt, lemon

Preparation
In a pot, bring water to a boil.
Add lentils, turmeric, cumin, and garlic.
After 10 minutes, stir in chopped tomato.
Simmer until lentils soften into a thick stew.
Add chopped greens and cook until just wilted.
Serve with flatbread or over warm buckwheat cakes.
