1 tbsp olive oil or melted butter

1 cup unsweetened almond milk

2 eggs

1 tsp baking powder

1 tsp cinnamon

1 tsp vanilla extract

1–2 tbsp honey or maple syrup (optional for sweetness)

Pinch of sea salt

Warm wild blueberry compote (just simmer blueberries + splash of lemon + touch of honey)

A dab of butter or coconut cream
