🌾 Honoring corn, beans, and squash — the sacred trio of survival
✨ Ingredients
1 cup roasted squash (butternut or acorn, cubed)
1 cup cooked corn grits or polenta (seasoned with herbs or garlic)
½ cup lentil mash (used in place of traditional beans)
1 fresh tomato (chopped)
Fresh basil or wild greens (for garnish)
🔥 Lentil Mash (Bean Substitute)
Ingredients
1 cup red or brown lentils
3 cups water
1 clove garlic (minced)
Optional: dash of olive oil or hemp oil
Preparation
Simmer lentils in water with garlic until very soft (about 25 minutes).
Mash gently with a fork or spoon until thick and smooth.
Stir in oil if desired for richness.
🌀 Assembly Instructions
In a shallow bowl, arrange the three main foods in a circle:
North: roasted squash
East: seasoned corn grits or polenta
West: lentil mash
Place tomato and basil in the center — the heart.
